Winter is a Cold Red IPA crafted for a season of festivities with family and friends. Bold and snappy with a piney aroma, this beer will keep you toasting all season long.

In a large mash tun, combine the Base Malt, Caramel Malt, and Crystal Malt. Add 5 gallons of filtered water at 165°F (74°C) and stir well. Maintain the temperature at 152°F (67°C) for 60 minutes.

Mash the Grains

After mashing, sparge the grains with 170°F (77°C) water to collect the wort in your brew kettle. Collect approximately 6.5 gallons of wort.

Sparging

Bring the wort to a boil. Once boiling, add the Cascade Hops and boil for 60 minutes.

Boil the Wort

With 15 minutes left in the boil, add the Centennial Hops and Simcoe Hops. This will add aroma and flavor to the beer.

After the 60-minute boil, cool the wort rapidly using a wort chiller until it reaches 70°F (21°C).

Cool the Wort

Transfer the cooled wort to a sanitized fermenter. Pitch the American Ale Yeast and seal the fermenter. Allow it to ferment for 1-2 weeks at 68°F (20°C).

Ferment

After fermentation is complete, dissolve 3 oz of priming sugar in 2 cups of boiling water to create a priming solution. Cool and add to the fermenter.

Prepare for Bottling

Transfer the beer into sanitized bottles and cap them. Allow the bottles to carbonate at room temperature for 1-2 weeks.
