Collaborating with Stepping Stone brewery, we're making a Danish lager. Lager yeast was first introduced and distributed to the world from the Danes - an achievement worthy of recognition! Along with Stepping Stone, our love of beer comes from the ability to bring people and communities together. Social Glue is a beer designed to cross borders and bring us all together.

Begin by heating 3 gallons of water to approximately 165°F (74°C). Add the Pilsner malt, Munich malt, and Carapils malt to the heated water in a mash tun. Stir thoroughly to ensure all grains are submerged and maintain the temperature of 150-155°F (65-68°C) for 60 minutes.

Mashing the Grains

After mashing, heat an additional 2 gallons of water to 170°F (77°C). Sparge the grains by rinsing with this heated water to extract the sugars. Collect the wort in a brew kettle.

Sparging

Bring the collected wort to a boil. Once boiling, add Hallertau hops to the kettle and boil for 60 minutes. Add the Saaz hops with 15 minutes remaining in the boil.

Boiling the Wort

After the boil is complete, cool the wort quickly using a wort chiller or an ice bath until it reaches approximately 70°F (21°C).

Cooling the Wort

Transfer the cooled wort to a sanitized fermentation vessel. Pitch the lager yeast according to the package instructions. Seal the vessel with an airlock and place it in a cool, dark area at around 50-55°F (10-13°C) for fermentation, typically 1-2 weeks.

Fermentation

Once fermentation is complete, prepare a priming solution by boiling the priming sugar in 2 cups of water and allowing it to cool. Transfer the beer into a bottling bucket, mixing in the priming solution gently. Bottle the beer using sanitized bottles and caps.

Bottling

Store the bottled beer at room temperature for 1-2 weeks to allow carbonation to occur. After this period, chill the bottles in the refrigerator before serving.
