We've really grown to love IPAs and all they offer over the years, but sometimes we need a little less ABV. That's where Infinite Recursion comes in. Friendlier on the wallet and friendlier on the ABV, this hoppy crusher is oh so delicious and packed with hop flavors. you may find yourself wanting to enjoy it on an infinite loop!

In a large brew kettle, heat 6 liters of water to 165°F (74°C). Add the Pale Malt and Caramel Malt to the water and stir well to combine. Maintain the temperature at 152°F (67°C) for 60 minutes.

Prepare the Mash

After 60 minutes, sparge the grains with enough hot water to collect about 5.5 liters of wort.

Sparging

Bring the wort to a rolling boil over high heat. Once boiling, add 1 oz of Citra Hops and boil for 60 minutes.

Boil the Wort

With 15 minutes remaining in the boil, add 1 oz of Cascade Hops and 0.5 oz of Simcoe Hops.

Add Flavor Hops

After the boil is complete, cool the wort rapidly using a wort chiller or an ice bath until it reaches about 70°F (21°C).

Cool the Wort

Transfer the cooled wort to a sanitized fermenter and pitch the American Ale Yeast. Seal with an airlock.

Pitch the Yeast

Allow the beer to ferment at a consistent temperature of 68°F (20°C) for about 1-2 weeks, or until fermentation is complete.

Fermentation

Once fermentation is complete, dissolve 3 oz of corn sugar in 2 cups of boiling water to create priming sugar. Allow to cool.

Prepare Bottling

Add the cooled priming sugar to the fermenter, stir gently to combine, and then bottle the beer into sanitized bottles. Cap the bottles.

Bottle the Beer

Allow the bottled beer to carbonate at room temperature for 1-2 weeks.
