Fit Turkey Wrap

Just in time for the holidays is this strong cheerfully spiced seasonal ale with big complex flavors to keep you warm and toasted all season long. Brewed only one day per year, this high octane 8.1% ABV brew has a sleighload of Centennial and Golding hops and is capped with a dose of cinnamon and nutmeg.

Start by heating 3 gallons of water to around 165°F (74°C). Add the Pale Malt and Crystal Malt to the heated water in a mash tun.

Mashing

Hold the mash at 152°F (67°C) for 60 minutes. Stir occasionally to ensure even temperature distribution.

Mash Process

After mashing, sparge with approximately 2 gallons of water at 170°F (77°C) to rinse the sugars from the grains.

Sparging

Bring the wort to a boil and add the Centennial Hops. Boil for 60 minutes, adding the Golding Hops and cinnamon sticks in the last 15 minutes of the boil.

Boiling

After boiling, cool the wort quickly to below 80°F (27°C) using a wort chiller or ice bath.

Cooling

Transfer the cooled wort to a sanitized fermentation vessel. Pitch the yeast and seal the vessel with an airlock. Ferment for about 2 weeks at 68°F (20°C).

Fermentation

After fermentation, dissolve priming sugar in a small amount of water and add to the beer. Bottle and cap the ale, then let it condition for another 2 weeks at room temperature.

Bottling

Chill the bottles and serve your Festive Ale. Garnish with a sprinkle of nutmeg if desired.
