The long, cold nights of winter are a little brighter with Celebration Ale. Wonderfully robust and rich, Celebration Ale is dry-hopped for a lively, intense aroma. Brewed especially for the holidays, it is perfect for a festive gathering or for a quiet evening at home.

In a large brew kettle, heat 5 gallons of water to approximately 165°F (74°C).

Heat Water

Add the Pale Malt, Crystal Malt, and Munich Malt to the heated water. Stir thoroughly and maintain the temperature at 150°F (65°C) for 60 minutes.

Mash the Grains

After mashing, sparge with enough water to collect about 6.5 gallons of wort.

Bring to Boil

Once boiling, add the 1 oz of Cascade hops and boil for 60 minutes.

Add Bittering Hops

With 15 minutes left in the boil, add 2 oz of Centennial hops.

Add Flavor Hops

With 5 minutes left in the boil, add 2 oz of Citra hops.

Add Aroma Hops

After the boil, cool the wort quickly using a wort chiller or an ice bath until it reaches about 70°F (21°C).

Cool the Wort

Transfer the cooled wort to a sanitized fermentation vessel.

Transfer to Fermenter

Sprinkle the packet of American Ale yeast on top of the wort. Seal the fermenter.

Pitch Yeast

Allow the beer to ferment for about 1-2 weeks at room temperature until fermentation is complete.

Prepare Bottles

Dissolve 3 oz of priming sugar in 2 cups of boiling water and cool. Add this to the beer before bottling.

Fill the sanitized bottles with the beer, leaving about 1 inch of headspace, and cap them.

Bottle the Beer

Store the bottles in a cool, dark place for about 2 weeks to carbonate.

Condition

After conditioning, chill the bottles in the refrigerator for a few hours before serving.
