The second release in Old Nation’s “New Orthodox” IPA series, Boss Tweed is a Double New England IPA weighing in at 9.3% with an aroma of peach, mango, tangerine, and probably some other stuff. A nice pilsner malt backbone with a touch of Vienna provides balance and a lingering sweetness on the back end and a hint of warming from the higher alcohol content.

In a large brew kettle, heat 5 gallons of filtered water to approximately 165°F (74°C). Add in the Pilsner malt and Vienna malt. Stir well to ensure all grains are saturated.

Prepare the Mash

Hold the mash at 150°F (65°C) for 60 minutes. Stir occasionally to maintain even temperature.

Mash Rest

After the mash rest, sparge with hot water to collect approximately 6 gallons of wort. Bring the wort to a boil.

Boil the Wort

Once boiling, add the Citra hops, Mosaic hops, and Amarillo hops. Boil for 60 minutes, adding hops at the beginning of the boil.

After the boil, cool the wort quickly to below 70°F (21°C) using a wort chiller.

Transfer the cooled wort to a sanitized fermentation vessel and pitch the New England ale yeast.

Pitch Yeast

Seal the fermentation vessel and store in a dark, cool place for 7-14 days, until fermentation is complete.

Primary Fermentation

After fermentation, add the peach puree, mango puree, and tangerine zest to the beer. Stir gently to combine.

Add Fruit Adjuncts

Allow the beer to condition for an additional 7-10 days to develop flavors.

Condition the Beer

After conditioning, transfer the beer to sanitized bottles, adding priming sugar if desired, and cap them.

Bottle the Beer

Allow the bottles to carbonate for another 1-2 weeks at room temperature before refrigerating and enjoying.
