Allagash White features a refreshing balance of citrus and spice. Wheat, coriander, and Curaçao orange peel round out the flavor of this pale straw-colored, hazy beer.

In a large mash tun, combine the pale malt and wheat malt with 6 gallons of water at 150°F (65°C). Stir well to ensure there are no dry clumps. Let it rest for about 60 minutes.

After the mash, sparge the grains with enough water to collect around 6 gallons of wort in the kettle.

Bring the wort to a boil. Once boiling, add the Hallertau hops and boil for 60 minutes.

With 15 minutes left in the boil, add the coriander seeds and Curaçao orange peel to the kettle.

Add Spices

Once the boil is complete, cool the wort quickly using a wort chiller or an ice bath until it reaches around 70°F (21°C).

Transfer the cooled wort to a sanitized fermentation vessel and pitch the Belgian Witbier yeast. Seal the vessel with an airlock.

Pitch the Yeast

Let the beer ferment at around 68°F (20°C) for 1-2 weeks until fermentation is complete.

After fermentation, siphon the beer into sanitized bottles, leaving about an inch of headspace. Add priming sugar if carbonating.

Bottle the Beer

Cap the bottles and let them age at room temperature for another 1-2 weeks to carbonate.
