In a large brew kettle, heat 5 gallons of filtered water to 165°F (74°C).

Heat Water

Once the water reaches temperature, add the pilsner and carapils malts. Stir well to ensure there are no dry clumps.

Add Grains

Maintain the mash at 152°F (67°C) for 60 minutes, stirring occasionally.

Mash Process

After mashing, sparge the grains with hot water until you collect around 6 gallons of wort.

Sparging

Boil Wort

Once boiling, add 1 oz of Hallertau hops for bitterness and boil for 60 minutes.

In the last 10 minutes of the boil, add 0.5 oz of Hallertau hops for aroma.

Aroma Hops

After the boil, cool the wort quickly using a wort chiller or ice bath to 70°F (21°C).

Cool the Wort

Transfer the cooled wort to a sanitized fermenter.

Transfer to Fermenter

Sprinkle the German Pilsner yeast on top of the wort.

Seal the fermenter with an airlock and place it in a cool, dark area for about 2 weeks.

Seal and Ferment

After fermentation, dissolve 3 oz of corn sugar in 2 cups of boiling water to create priming sugar.

Prepare Bottling

Add the priming sugar solution to the fermenter and gently mix to avoid oxidation.

Fill sanitized bottles with the beer, leaving some headspace at the top.

Bottle Beer

Cap the bottles and let them condition at room temperature for 2 weeks.

Cap and Condition

After conditioning, chill the bottles in the refrigerator for at least 24 hours before serving. Enjoy your Ada Pilsner!
