Prepare the Chicken
In a large pot, add the whole chicken and enough water to cover it. Add 1 tablespoon of salt, ginger slices, and minced garlic. Bring to a boil, then reduce to a simmer and cook for about 30-40 minutes until the chicken is cooked through.
Cook the Rice
Remove the chicken from the pot and set it aside to cool. Strain the broth and reserve it for later. In a separate pot, add 3 cups of jasmine rice and 4 cups of the reserved chicken broth. Bring to a boil, then reduce to low heat, cover, and cook for about 20 minutes until the rice is fluffy.
Prepare the Sauce
In a small bowl, mix together the soy sauce and sesame oil. Adjust the flavors with more soy sauce or sesame oil as desired.
Optional Chicken Livers
If using chicken livers, rinse them under cold water. In a small pan, sear them in a little oil until cooked through, about 5-7 minutes.
