Simple Syrup (make ahead)
Combine and dissolve
Place 0.5 cup granulated sugar and 0.5 cup water in a small saucepan.
Warm gently over low heat, stirring until the sugar fully dissolves. Do not boil.
Remove from heat, let cool to room temperature, then transfer to a clean bottle or jar. Refrigerate. Yields about 1 cup. Use 0.5 oz per cocktail.
Build the Tom Collins
Chill a Collins glass (tall highball glass) by filling it briefly with ice and cold water, then discard the water. Alternatively, place the glass in the freezer for a few minutes.
Fill the chilled Collins glass about two-thirds full with fresh cubed ice.
Measure and pour 2 oz premium organic gin over the ice.
Add 1 oz freshly squeezed lemon juice. For best flavor, squeeze a medium lemon (about 1 oz).
Add 0.5 oz simple syrup. Adjust to 0.25–0.75 oz depending on desired sweetness.
Gently stir the gin, lemon juice, and simple syrup with a long bar spoon 6–8 turns to combine and slightly chill without flattening the soda later.
Top with approximately 3 oz cold soda water. Pour slowly over the back of the spoon or down the side of the glass to preserve carbonation.
Give one or two gentle turns with the spoon to integrate the soda—avoid vigorous stirring to keep effervescence.
Garnish with a lemon wheel or wedge on the rim and an optional maraschino cherry skewered on a pick.
Serve immediately with a straw or stirrer. Encourage the drinker to sip through the bubbles for the classic Tom Collins experience.
