Make the yogurt base
In a medium bowl, stir together 1 cup plain Greek yogurt, 1 tablespoon honey or maple syrup, and 1 teaspoon vanilla extract until smooth and slightly glossy. Taste and adjust sweetness if desired.

If using strawberries, hull and quarter about 3 ounces. Toss with 1/2 teaspoon lemon zest and optionally 2 tablespoons lightly mashed raspberries or rhubarb compote. Let sit 5–10 minutes so flavors meld and juices begin to macerate.

If using peaches or mango, dice about 3 ounces. Toss with 1/2 tablespoon lime juice and 1 teaspoon chopped basil or mint if desired. Allow to sit 5 minutes to soften and release juices.

Peel and dice about 3 ounces of apple or pear. In a small skillet over medium heat, add the fruit with 1/2 tablespoon maple syrup and 1/4 teaspoon cinnamon. Cook 3–5 minutes until slightly softened and glazed. Cool slightly before layering.

If using pomegranate arils or citrus segments (cooked or fresh), combine about 3 ounces with 1/4 teaspoon orange zest. Optionally toss with 1 teaspoon chopped crystallized ginger or toasted walnuts for texture and warmth.

Measure 1/2 cup granola or toasted muesli and 1 tablespoon chopped nuts. If your granola is soft, toast it gently in a dry skillet for 2–3 minutes over medium heat to add crispness. Cool briefly.
Assembly
Layer the cup
Choose one seasonal fruit preparation from the four options above. In a clear serving cup, spoon roughly 1/3 of the yogurt base into the bottom (about 1/3 cup). Add an even layer of the chosen seasonal fruit (about 2–3 tablespoons). Sprinkle a layer of granola (about 2 tablespoons). Repeat: add another 1/3 cup yogurt, a second layer of fruit (2 tablespoons), then finish with the remaining yogurt on top.
Top and garnish
Scatter the remaining granola and chopped nuts over the top (about 2 tablespoons). Finish with 1 teaspoon toasted seeds or extra granola and garnish with a small herb sprig or edible flower if using. If you prepared cooked autumn fruit, let it cool before stacking so it doesn't make the granola soggy.
Serve or store
Serve immediately for the crispiest texture. To store, cover and refrigerate up to 8–12 hours (granola will soften over time). If making ahead, keep granola and seeds separate and add just before serving.
