Prepare glass

Run a lime wedge around the rim of a highball or Collins glass. Pour sea salt onto a small plate and gently dip the rim into the salt to coat. Set the glass aside.

Add ice

Fill the prepared glass about three-quarters full with cubed ice (approximately 1 cup).

Build the cocktail

In the glass over ice, pour 2 oz blanco tequila and 0.5 oz fresh lime juice. If you prefer a slightly sweeter Paloma, add 0.25 oz simple syrup at this stage.

Top with grapefruit soda

Gently top the mixture with 4 oz grapefruit soda. Stir once or twice with a bar spoon to combine — be gentle to preserve the soda's effervescence.

Garnish and serve

Garnish with a fresh grapefruit wedge (resting on the rim or floated). Serve immediately with a straw or stirrer. Taste and adjust: add a dash more lime or a splash more soda if desired.
