Prepare Simple Syrup (if not using pre-made)

Make syrup

Combine 0.5 cup granulated sugar and 0.5 cup water in a small saucepan. Heat over medium, stirring until the sugar is fully dissolved and the mixture is clear (about 2–3 minutes). Remove from heat and let cool to room temperature. Transfer to a jar and chill if making ahead.

Assemble Mojito

Muddle mint and syrup

Place 10 fresh mint leaves in the bottom of a sturdy highball glass. Add 0.75 oz simple syrup and 1 oz fresh lime juice. Using a muddler (or the back of a wooden spoon), gently press and twist the mint leaves 6–8 times to release the aromatic oils. Do not over-muddle — avoid shredding the leaves to prevent bitterness.

Add rum and ice

Pour 2 oz white rum into the glass. Fill the glass with crushed ice up to about 3/4 full (roughly 1 cup).

Top and lift

Top with about 2 oz club soda. Use a long bar spoon to gently lift and fold the mint and liquid from the bottom to the top 3 or 4 times to integrate flavors without bruising the mint further.

Garnish and serve

Garnish with a lime wedge on the rim and an extra small sprig of mint. Insert a straw so the drinker can sip from near the mint. Serve immediately.
