Method

For iced tea (cold brew method)

Steep overnight

Place 4 black tea bags (or equivalent 4 tbs loose leaf) in a heatproof pitcher. Add 8 cups cold filtered water, stir once to saturate leaves, cover and refrigerate for 8–12 hours (overnight).

Remove tea bags or strain out loose leaves. If you want the tea sweetened, dissolve 1 tablespoon granulated sugar in 2 tablespoons hot water to make a quick syrup, then stir into cold tea to taste. Add lemon slices and mint if desired. Fill glasses with ice and pour tea over ice. Serve immediately.

Variation: For a faster iced tea, brew the tea hot (see hot tea directions) using 2 cups water boiled and 6 minutes steep, then dilute with 6 cups cold water and chill briefly until cold before serving over ice.

For hot tea

Boil and steep

Bring 8 cups water to a boil. Remove from heat and add 4 tea bags (or 4 tbs loose leaf in an infuser). Cover and steep 3–5 minutes for standard strength or up to 5–7 minutes for stronger flavor. If you like, add a cinnamon stick to the pot while steeping for a subtle spice.

Remove tea bags/infuser and cinnamon stick. Sweeten by stirring in granulated sugar or honey to taste. Pour into cups and add milk (about 1/2 cup divided among cups) if desired. Garnish with lemon slice or mint sprig.
