Prepare produce
Rinse the fresh spinach thoroughly and shake off excess water. Peel the banana and slice into 1/2-inch rounds. Peel, seed (if necessary) and chop the cucumber into roughly 1-inch pieces so it blends evenly.
Assemble in blender
Place the spinach into the blender first, then add the banana slices, chopped cucumber, frozen mango chunks, and Greek yogurt (if using). Pour in the pineapple juice and the 1/2 cup cold water or coconut water.
Add flavor enhancers
Add the fresh lemon juice. If you prefer a sweeter smoothie, add 1 teaspoon honey or maple syrup. Add ice cubes if you want the smoothie colder or thicker.
Blend
Secure the blender lid and blend on high for 45–90 seconds, or until the mixture is completely smooth and no large pieces remain. Stop and scrape down the sides once if needed, then blend again for 10–15 seconds.
Adjust consistency and flavor
Check the texture and taste. If the smoothie is too thick, add up to 1/4 cup more water or pineapple juice and pulse to combine. If it needs more brightness, add another 1/2 teaspoon lemon juice. If it needs sweetness, add small increments of honey/maple syrup to taste and blend briefly.
Serve
Pour the smoothie into two tall glasses (or one large glass). Garnish each with a mint leaf and a pineapple wedge if desired. Serve immediately while cold.
