Prepare glass

Chill a flute or coupe by placing it in the freezer for a few minutes or by filling it with ice water while you mix the cocktail. If using ice water, discard before pouring.

Combine base ingredients

In a cocktail shaker, add organic gin (1.5 oz), fresh lemon juice (0.75 oz), and simple syrup (0.5 oz). Fill the shaker with ice (enough to three-quarters fill).

Shake

Secure the shaker lid and shake vigorously for about 10–15 seconds, until the outside of the shaker is cold and slightly frosted. This chills and lightly dilutes the mixture.

Strain

Double-strain the shaken mixture into the chilled flute or coupe using a Hawthorne strainer and a fine mesh strainer to remove ice shards and pulp. Fill the glass about two-thirds full.

Top with champagne

Carefully top the cocktail with chilled champagne or dry sparkling wine (about 3 oz). Pour slowly down the side of the glass to preserve bubbles and avoid excessive foaming.

Garnish and serve

Express a lemon twist over the drink by holding the twist over the glass and giving it a quick squeeze to release oils, then drop it into the cocktail or rim the glass with it. Serve immediately.
