Infuse cereal into milk

Place 1 cup of cereal into a bowl or jar. Pour 1 cup of whole milk over the cereal so it's fully submerged. Stir gently to make sure all cereal is wet.

Sweeten and flavor

Add 1 teaspoon granulated sugar, 1 teaspoon vanilla extract, and a pinch of salt to the cereal and milk. Stir briefly to combine.

Steep

Let the mixture steep for 20–30 minutes at room temperature. If you prefer a stronger cereal flavor, steep up to 1 hour, but taste after 30 minutes to avoid over-extraction of any bitter notes.

Strain

Strain the milk through a fine mesh sieve or cheesecloth into a clean container, pressing lightly on the cereal to extract liquid but not so hard that you crush solids. Discard (or reserve) the soggy cereal for eating or baking.

Chill

Refrigerate the cereal milk until cold if making an iced latte, or use it warm (briefly heat) if making a hot latte. Chill for at least 10 minutes if preparing iced.

Coffee & assembly

Brew espresso

Prepare 2 shots (about 60 ml) of espresso or 60 ml of very strong brewed coffee. If making an iced latte, cool the espresso slightly so it doesn't melt the ice instantly.

Heat or froth milk

If you want a creamier hot latte, steam or heat the additional 1/2 cup milk to about 60–65°C (140–150°F) and froth slightly. Alternatively, warm 1/2 cup of the cereal milk gently on the stove or in the microwave (do not boil). For an iced latte, skip heating.

Assemble (hot latte)

Pour the hot cereal milk (and warmed additional milk if used) into a cup, then pour the espresso over the milk. Spoon any foam on top. Garnish with a light dusting of cinnamon or a sprinkle of crushed cereal.

Assemble (iced latte)

Fill a glass with 1 cup ice. Add the chilled cereal milk (and additional cold milk if using) to about two-thirds full, then pour the cooled espresso over the top. Stir gently to combine. Garnish with crushed cereal or a pinch of cinnamon.

Taste and adjust

Taste your latte. Add a little sugar or an extra splash of cereal milk if you want it sweeter or creamier. Serve immediately.
