Broccoli & main
Prepare broccoli
Trim the broccoli into bite-size florets (about 4 cups). If stems are thick, peel and slice them into 1/4-inch coins so they cook evenly.
Heat pot
Choose a large skillet with a tight-fitting lid or a medium saucepan. Add 1 tablespoon olive oil and 1 tablespoon butter and heat over medium until butter is melted and foaming.
Steam (vapor) the broccoli
Add the broccoli florets to the pan, toss to coat in fat and garlic for 30 seconds, then add 1 cup water. Immediately cover with the lid, raise heat to medium-high until steam builds, then reduce to medium-low and steam for 4–6 minutes, until florets are bright green and crisp-tender (test with a fork).
Finish cooking
Uncover and cook an additional 1–2 minutes to evaporate most of the liquid and let broccoli warm through and develop a little color. If pan is dry, add the remaining 1 tablespoon butter and swirl to glaze broccoli.
Aromatics & seasoning
Immediately after uncovering (while broccoli is hot), sprinkle with lemon zest, lemon juice, sea salt, black pepper, and red pepper flakes. Toss gently in the pan to distribute seasonings evenly and allow the citrus to lift flavors.
Finish & garnish
Remove pan from heat. Sprinkle grated Parmesan and toasted sliced almonds over the broccoli and toss gently to combine so the cheese melts slightly on contact with the warm florets.
Transfer to a serving bowl or plate. Garnish with chopped fresh parsley. Taste and adjust seasoning with a pinch more salt or a squeeze of lemon if desired.
Serve warm as a bright brunch side or as part of a composed brunch plate.
