For the lemonade base
Make simple syrup
Combine the granulated sugar and hot water in a heatproof measuring cup or small saucepan. Stir until the sugar is completely dissolved. Let cool to room temperature (about 5–10 minutes).
Juice lemons
If you haven't already, squeeze fresh lemons until you have 0.75 cups (about 4–5 medium lemons). Strain seeds and excessive pulp through a fine sieve for a smooth lemonade.
In a pitcher or large mixing glass, combine the cooled simple syrup, fresh lemon juice, and 1.5 cups cold water. Stir to combine. Taste and adjust: add more water if too tart or up to 1 tablespoon additional sugar if too tart.
For the Benz twist (aromatic and bright additions)
Lightly clap the basil leaves between your palms to release aroma, then add 6 of the basil leaves and the thyme sprigs to the lemonade base. Using a muddler or the back of a spoon, gently bruise (not shred) the herbs against the side of the pitcher to release oils. Let steep for 5 minutes.
After steeping, remove and discard thyme stems. If you prefer stronger herb flavor, leave a few small thyme leaves in. Strain the lemonade through a fine mesh sieve into a clean container to remove herb bits, pressing gently on the solids to extract flavor.
Add a pinch of fine sea salt and 4 dashes of Angostura bitters to the strained lemonade, stirring briskly to integrate. Salt brightens citrus; bitters add aromatic depth.
For shaking & serving
Fill a cocktail shaker halfway with ice (about 1 to 1.5 cups). Pour 3/4 cup of the prepared Benz lemonade into the shaker (this recipe yields several servings—see serving note). Add 1 extra basil leaf (torn) into the shaker for aroma.
Secure the shaker lid and shake vigorously for 10–12 seconds until the outside of the shaker is cold and slightly frosted. The shaking chills the drink and aerates it, giving a frothy top.
Fill two tall glasses with ice (use remaining ice). Strain the shaken lemonade into the glasses, dividing evenly. Top each glass with a splash (about 1–2 tbsp) of club soda if you want effervescence.
