Transfer toasted bread to a plate and keep warm while you prepare the avocado smash.
Avocado Smash
Prepare avocado
Halve and pit the avocados. Scoop the flesh into a medium bowl and roughly mash with a fork until partly smooth but still a little chunky (about 10–15 seconds of mashing).
Add the lemon juice, minced garlic, 2 tsp of the sea salt (reserve 1 tsp for seasoning the finished toast), black pepper, and red pepper flakes to the mashed avocado. Mix until combined. Taste and adjust seasoning — add more salt, pepper, or lemon if needed.
Everything Seasoning Topping
Place the toasted slices on plates. Divide the avocado mixture evenly between the two slices and spread to the edges with a spoon or knife.
Sprinkle 1 tsp of everything bagel seasoning on each slice (total 2 tsp). If using toasted sesame seeds, sprinkle lightly over the top for extra crunch and flavor.
Optional Garnishes & Extras
Add optional toppings as desired: halve and scatter cherry tomatoes, sprinkle microgreens or arugula, crumble feta or goat cheese over the avocado, and top each toast with a soft-boiled or fried egg if using.
If using eggs: for soft-boiled — bring a small pot of water to a gentle boil, lower eggs in, cook 6–7 minutes for a slightly runny yolk, transfer to ice bath 2 minutes, peel and halve. For fried — heat 1 tsp oil in a small pan, fry eggs to desired doneness, season lightly with salt and pepper, then place on toasts.
Finish with a final pinch of reserved sea salt (use remaining 1 tsp) and a crack of black pepper. Add a few drops of hot sauce if desired. Serve immediately.
