Prepare glass

Take a rocks or tiki-style double old fashioned glass. Fill it with crushed ice and set aside to chill while you mix the cocktail.

Combine ingredients

In a cocktail shaker, add the aged rum, Averna (or your chosen amaro), fresh lime juice, orgeat, falernum, demerara syrup and 2 dashes of Angostura bitters.

Shake

Add ice to the shaker (about 1 cup). Shake vigorously for 12–15 seconds until the outside of the shaker is well chilled and slightly frosted. This both chills and dilutes the mix to balance the syrups and citrus.

Strain

Discard the water from the chilled glass if any accumulated. Using a fine or Hawthorne strainer, strain the cocktail over the prepared glass filled with fresh crushed ice. For a slightly frothier finish, double-strain through a fine mesh to remove small ice shards and any pulp.

Finish & garnish

Top with a small additional sprinkle of crushed ice if needed. Express an orange peel or flamed orange peel over the drink for aromatics, or rim with a toasted almond sliver perched on the ice. Finish with a lime wheel on the edge.

Serve

Serve immediately with a short straw. The drink should present a balanced interplay of warm amaro bitterness, rich rum depth, almond sweetness from the orgeat, and bright citrus — a modern tiki-leaning cocktail befitting the name 'Tricycle Thief.'
