Measure and prepare

Chill a double old-fashioned glass or tiki mug in the freezer for a few minutes. Measure all spirits, juices and syrups so they are ready to pour.

Add 2 oz light rum, 0.5 oz dark rum, 0.75 oz passion fruit purée, 1 oz pineapple juice, 0.75 oz fresh lime juice, 0.25 oz fresh lemon juice, 0.5 oz falernum, 0.25 oz orgeat, 0.25 oz simple syrup and 2 dashes Angostura bitters to a cocktail shaker.

Fill the shaker two-thirds with ice (preferably cubed), cap it and shake vigorously for 10–15 seconds until the exterior of the shaker is frosty and the liquid is well chilled and slightly diluted.

Strain the mixture into the chilled glass or tiki mug over a base of crushed ice (leave room for an optional float).

Optional overproof float

Carefully float 0.25 oz overproof rum on top by pouring it over the back of a bar spoon so it rests atop the crushed ice. This adds aroma and drama — light gently before sipping to distribute.

Garnish & Ice

Top the glass with crushed ice to form a small dome if needed. If you prefer a slower-melting drink, add one large ice cube in the center before the final crushed-ice crown.

Slap the mint sprig between your palms briefly to release its aroma, then tuck it into the crushed ice near the rim so the fragrance greets the drinker.

Add a lime wheel or wedge on the rim and spear a cherry or pineapple leaf on a toothpick; rest it across the glass for a jungle-inspired look.

Serve with a straw and a long cocktail spoon. Suggest the drinker stir lightly to incorporate the overproof float if used, and enjoy immediately while cold and aromatic.
