Chill glass

Place a Champagne flute or coupe in the refrigerator or fill with ice water while you prepare the cocktail to ensure the drink stays cold when served.

Combine base ingredients

Add the gin, fresh lemon juice, and simple syrup into a cocktail shaker. Add a handful of ice (about 1 cup) to the shaker.

Shake

Secure the shaker and shake vigorously for about 10–15 seconds, until the shaker is very cold to the touch and the mixture is well chilled and slightly diluted.

Strain

Discard ice or water from the chilled flute/coupe if you used it to chill. Double-strain the shaken mixture into the chilled glass to remove ice shards and any pulp (use a Hawthorne strainer and a fine mesh strainer if available).

Top with sparkling wine

Carefully top the strained mixture with about 3 oz of chilled Champagne or dry sparkling wine. Pour gently down the side of the glass to preserve carbonation and avoid excessive foaming.

Garnish and serve

Express a lemon twist over the glass by holding the twist skin-side down and giving it a quick squeeze to release oils, then run the rim with the twist and drop it into the drink as garnish. Serve immediately.
