Juice & Measure

Juice the lime and grapefruit until you have the required amounts (0.75 oz lime, 0.5 oz grapefruit). Measure the gin, elderflower liqueur and simple syrup. Keep club soda chilled in the refrigerator.

Shake

In a shaker, add 3 large ice cubes, 2 oz gin, 0.75 oz fresh lime juice, 0.5 oz fresh grapefruit juice, 0.5 oz elderflower liqueur, and 0.25 oz simple syrup. Secure the lid and shake vigorously for 12–15 seconds until well chilled and slightly diluted.

Strain

Double-strain the shaken mixture into a chilled highball or Collins glass filled with 1–2 fresh large ice cubes (reserve one cube if you prefer taller presentation). Double straining (using the shaker's built-in strainer and a fine mesh strainer) removes small ice shards and pulp for a clean texture.

Finish & Serve

Top the strained cocktail with 1.5 oz chilled club soda, pouring gently down the side of the glass to preserve effervescence. Give the drink one very gentle stir (one rotation) to incorporate the soda without flattening it.

Express a grapefruit twist over the surface to release oils, then run the twist around the rim and drop it into the glass. Optionally slap a fresh mint sprig between your palms to release aroma and place it next to the twist as a secondary garnish.

Serve with a short straw if desired. Recommend drinking while cold; the balance of floral elderflower, bright citrus and crisp gin should evoke a light, breezy character — hence the name 'Chasing Windmills.'
