Prepare papaya
Peel the green papaya. Using a julienne peeler, mandoline with julienne blade, or a sharp knife, shred the papaya into long thin strips until you have about 4 cups. Place shredded papaya in a large mixing bowl and, if it seems very wet, lightly pat dry with paper towels.

Prepare vegetables
Trim and cut tomatoes into wedges. Peel and julienne the carrot if using. Blanch the green beans in boiling water for 30 seconds, then plunge into ice water, drain, and cut into 1-inch pieces. Add tomatoes, carrot, and green beans to the bowl with the papaya and toss gently to combine.

Toast peanuts (if needed)
If your peanuts are raw, heat 1 teaspoon vegetable oil in a small skillet over medium heat. Add peanuts and toast, stirring frequently, until golden and fragrant, 3–5 minutes. Remove from heat and let cool slightly, then coarsely crush with a mortar and pestle or by placing in a bag and pounding with a rolling pin. Reserve about 2 tablespoons for garnish and 1/4 cup to toss into the salad.

Make dressing (traditional mortar & pestle method)
In a mortar and pestle (or a small bowl if you don't have one), crush the garlic cloves and Thai chilies together until a rough paste forms. Add the palm sugar and crush/mix until mostly dissolved. Stir in the fish sauce (or light soy sauce) and lime juice, tasting as you go: the dressing should be balanced salty-sour-sweet. If using dried shrimp, add and lightly crush into the mixture for extra umami. Adjust seasoning: add up to 1 teaspoon more sugar for sweetness, or up to 1 teaspoon more fish sauce for saltiness.

Assemble salad
Pour the dressing over the shredded papaya and vegetables. Using a spoon and fork (or two large spoons), toss vigorously for 30–60 seconds so the dressing coats the papaya and lightly bruises it, which helps absorb flavors. Add about 1/4 cup of the crushed peanuts and toss again to combine.

Plate and garnish
Transfer the salad to a serving platter or individual plates. Sprinkle the reserved crushed peanuts on top, scatter cilantro leaves if using, and serve with lime wedges on the side. Taste and adjust with extra lime juice, fish sauce, or sugar as desired.

Notes and variations
For a vegetarian version, omit dried shrimp and use soy sauce instead of fish sauce. For less heat, reduce chilies to 1 or remove seeds. If green papaya is unavailable, shredded green mango or jicama can be used as substitutes, though flavor and texture will differ slightly.
