Create cheese crust
Press a generous 2 to 3 tablespoons of shredded cheddar onto the cut surface of each avocado half, forming an even, compact layer of cheese that adheres to the avocado. For best adhesion, press firmly so the cheese sticks to the flesh. If using, mix the grated Parmesan into the shredded cheddar before pressing for more flavor.

Set up dredging bowls
Place the flour in a shallow bowl and season with 1/2 tsp smoked paprika and 1/4 tsp garlic powder (reserve remaining spices for egg wash). In a second shallow bowl, whisk the eggs with milk until smooth and stir in the remaining smoked paprika and garlic powder. In a third shallow bowl combine cornmeal or panko with the optional grated Parmesan and a pinch (about 1/8 tsp) of salt.

Dredge the avocado halves
Working one at a time, first lightly dust the cheese-coated avocado surface (and rim) with flour — this creates a dry layer so the egg wash will stick. Shake off excess flour. Next, dip the avocado into the egg mixture, coating the cheese layer thoroughly. Allow any excess egg to drip off, then press the egg-coated cheese side into the cornmeal/panko mixture, pressing gently so the crumbs adhere and form a compact crust. Repeat the egg & crumb step a second time for extra thick crust, if desired.

Place breaded avocado halves on a tray and refrigerate for 15–20 minutes. Chilling helps the coating set and reduces splatter during frying.

Heat oil
Pour enough neutral oil into a heavy skillet or frying pan to reach ~1/4 inch depth (about 3/4 to 1 cup depending on pan size). Heat over medium-high heat until the oil registers 350°F (175°C) on a thermometer or a small pinch of panko sizzles immediately on contact.

Fry the avocados
Carefully place the breaded avocado halves, crust side down first, into the hot oil. Fry in batches without crowding the pan. Cook 2–3 minutes per side until the crust is golden brown and crisp and the cheese has melted. Use a spatula to gently turn — the avocado flesh is tender, so turn carefully to avoid collapse. If the cheese layer sticks as you turn, let it crisp a few more seconds before attempting.

Whisk together sour cream (or Greek yogurt), hot sauce, lime zest, and 1/8 tsp salt in a small bowl until smooth. Taste and adjust heat or salt as desired.

Plate the crispy cheese avocados cut-side up to show the cheese crust, or halved again for bite-size pieces. Drizzle or dollop the prepared sauce over or alongside. Garnish with extra chopped cilantro and a squeeze of lime. Serve immediately while crust is crisp and cheese is melty.
