Prepare and measure
Chill a coupe or Nick & Nora glass in the freezer or fill with ice water to chill while you build the cocktail. Measure 2 oz gin, 0.5 oz blue curaçao, 0.75 oz fresh lemon juice, 0.5 oz simple syrup, and 0.5 oz egg white (if using) into a cocktail shaker.
Dry shake
If using egg white, dry shake (no ice) the measured ingredients vigorously for 15–20 seconds to emulsify and produce a silky foam.
Wet shake
Add a generous handful of ice (about 1 cup) to the shaker. Secure the lid and shake vigorously for 12–15 seconds until the shaker is very cold to the touch and the mixture is well chilled and slightly diluted.
Double strain and finish
Discard the ice or water from your chilled glass. Double-strain the cocktail into the chilled glass using a Hawthorne strainer and a fine mesh strainer (this removes small ice shards and any coagulated egg white bits), producing a bright blue, slightly foamy cocktail. Add 2 dashes of Angostura bitters on top of the foam — the bitters will add aroma and a subtle spice note; use the tip of a metal straw or toothpick to lightly feather or swirl the bitters into a decorative pattern if desired.
Garnish & Serve
Express the oils of a lemon twist over the cocktail by holding the twist skin-side down over the drink and giving it a quick squeeze, then rub the rim with the twist and drop it into the drink. Gently slap the mint sprig between your palms to release its aroma and place it upright as a garnish beside the twist. Serve immediately.
