Chill and make tea

Brew a strong green Thai tea (or jasmine green tea) using about double the usual leaves or bags. Steep 4–6 minutes, strain, cool to room temperature and chill in the refrigerator until cold (or use strongly brewed iced tea already chilled). Measure 2 oz per drink.

Prepare cucumber juice

Peel (if desired) and roughly chop a peeled English cucumber. Place in a blender and puree until smooth. Strain through a fine mesh sieve or cheesecloth, pressing to extract about 1.5 oz of juice per drink. Chill.

Rim (optional)

If using a rim, rub the glass edge with a lime wedge and dip into crushed toasted rice or celery salt for an aromatic savory rim. Set glass in the freezer to chill briefly.

Building the drink

In a cocktail shaker, add the 8 Thai basil leaves and the light simple syrup. Gently muddle just enough to bruise the basil and release aromatics — do not pulverize to avoid bitterness.

Add the fresh lime juice, fresh lemon juice, cucumber juice, and the chilled green Thai tea to the shaker.

If making the savory Caesar-style refresher (Hard Nohra Caesar interpretation), add 1/4 tsp fish sauce and/or 1/4 tsp Worcestershire sauce or 1/4 tsp light soy sauce, plus a pinch of fine sea salt and a pinch of freshly cracked black pepper. Taste if desired and adjust small amounts to preference. For a non-savory Thai refresher omit these.

Fill the shaker with ice (about 1 cup) and shake vigorously for 8–12 seconds until the shaker becomes cold to the touch and the ingredients are well combined.

Double strain (use a Hawthorne strainer and a fine mesh sieve) into the prepared chilled glass over fresh ice. This removes basil bits and any pulp for a clean final drink.

Top gently with 2 oz cold soda water to add effervescence. Give one gentle stir with a bar spoon to integrate without flattening the soda.

Garnish and finish

Garnish with a Thai basil sprig, a cucumber ribbon or wheel, and a lime wheel or wedge. If using the savory rim, present with the rim visible.

Serve immediately while cold and effervescent. Note: stir again lightly before sipping if the savory components have settled.
