Select and harvest ripe Pinot Grigio grapes, ensuring they are free of rot and other defects.

Harvesting the Grapes

In a clean fermentation vessel, crush the grapes to release the juice. Ensure that skins and seeds are included for flavor extraction.

Crushing the Grapes

Sprinkle the yeast over the crushed grapes and stir gently to combine. This will initiate the fermentation process.

Adding Yeast

Cover the vessel and allow the mixture to ferment at a controlled temperature (around 18-22°C) for 10-14 days.

Fermentation

After fermentation, press the mixture to separate the liquid from the solids. Collect the wine in a clean container.

Add sulfites to the wine to preserve it and prevent unwanted bacteria growth.

Adding Sulfites

If desired, add malolactic bacteria to soften the acidity of the wine and allow for secondary fermentation.

Secondary Fermentation (Optional)

Allow the wine to age in a cool, dark place for at least 4-6 months for flavor development.

Aging

In a small bowl, combine freshly pressed apple juice, lemon zest, and lime juice. Adjust the sweetness with sugar to taste.

Preparing Flavor Enhancers

Once the wine has aged, blend the flavor enhancers into the wine gently, ensuring an even distribution.

Blending

Bottle the wine in clean glass bottles, ensuring to leave some space at the top. Seal tightly with corks.

Bottling

Chill the bottled wine in the refrigerator for at least 2-4 hours before serving.
