Begin by handpicking ripe Cabernet Sauvignon grapes, ensuring they are free from mold and rot. Place them in clean, sanitized containers.

Harvesting Grapes

Once harvested, crush the grapes to release their juice. This can be done using a manual crusher or by hand, ensuring to break the skins to extract the juice.

Crushing Grapes

Transfer the crushed grapes (must) into a fermentation vessel. Measure and add 2 liters of water to adjust the sugar content if necessary.

Preparing Must

Sprinkle 10 grams of wine yeast evenly over the surface of the must. Allow it to hydrate for a few minutes before gently stirring it in.

Adding Yeast

Cover the fermentation vessel with a clean cloth and let it ferment at room temperature (18-24°C) for about 7-14 days. Stir the must daily to promote fermentation.

Fermentation

Once fermentation is complete, press the must using a wine press to separate the liquid wine from the solids. Collect the wine in a clean container.

Pressing the Wine

Dissolve 5 grams of potassium metabisulfite in a small amount of wine and add it to the pressed wine to prevent oxidation and spoilage.

Adding Sulfites

Transfer the wine into an oak barrel or a glass carboy with 100 grams of medium toast oak chips. Allow the wine to age for at least 6 months to develop its flavors.

Aging the Wine

After aging, siphon the wine into clean, sanitized bottles. Seal them with corks and label them accordingly.

Bottling

Let the wine rest for an additional month before enjoying. Serve at a cool room temperature to fully appreciate its balance of earth, mineral, and deep berry flavors.
