Cooking Instructions
Prepare the Beans
Soak the red beans overnight. Drain and rinse. In a pot, cover the beans with water and cook until they are tender, about 1-1.5 hours. Season with salt.
Cook the Rice
In a separate pot, cook the white rice according to package instructions. Set aside.
Prepare the Ground Meat
In a skillet, heat 1 tablespoon of cooking oil. Add finely chopped onion and garlic, sauté until translucent. Add ground beef, season with salt, pepper, cumin, and coriander. Cook until browned.
Cook the Chorizo
In another skillet, heat 1 tablespoon of cooking oil. Cook the chorizo sausages until browned and heated through. Slice and set aside.
Fry the Plantains
Slice the ripe plantains diagonally. In a skillet, heat the remaining tablespoon of cooking oil. Fry the plantain slices until golden brown on both sides. Drain on paper towels.
Assemble the Platter
On a large serving plate, arrange a portion of beans, rice, ground meat, chorizo, fried plantains, and sliced avocado. Serve and enjoy!
