Make the Marinade

In a bowl, combine Den Miso, sake, mirin, and sugar. Whisk until the sugar is dissolved and the mixture is smooth.

Marinate the Fish

Place the black cod fillets in a shallow dish and pour the marinade over the fish, ensuring it is fully coated. Cover and refrigerate for 2-3 days for optimal flavor.

Bake the Fish

Preheat the oven to 375°F (190°C). Remove the fish from the marinade and shake off any excess. Place the fillets on a baking sheet lined with parchment paper. Bake for 15-20 minutes or until the fish flakes easily with a fork.

Finish with Salamander Broil

After baking, switch the oven to broil and place the fish under the salamander for an additional 2-3 minutes to achieve a caramelized, slightly charred top.
