Preheat your oven to 350°F (175°C). In a medium bowl, combine graham cracker crumbs, melted butter, and sugar. Mix until well combined. Press the mixture into the bottom of a 9-inch springform pan to form an even layer. Bake for 8-10 minutes and then remove from the oven to cool.

Prepare the Crust

In a large mixing bowl, beat the cream cheese until smooth and creamy. Gradually add the granulated sugar while mixing. Add the sour cream, vanilla extract, and salt, and continue to mix until fully incorporated. Add the eggs one at a time, mixing on low speed until just combined.

Make the Filling

Pour the cheesecake filling over the cooled crust. Spread it evenly. Bake in the preheated oven for 50-60 minutes or until the center is set but still slightly jiggly. Turn off the oven and leave the cheesecake inside for 1 hour.

Combine and Bake

Remove the cheesecake from the oven and let it cool to room temperature. Once cooled, cover and refrigerate for at least 4 hours or overnight. Serve chilled and enjoy your rich and creamy cheesecake!
