Prepare fish
Pat the whitefish fillets dry with paper towels. Cut into 6–8 bite-size pieces (about 1.5–2 oz each). Lightly season both sides with 1 tsp salt and 1/2 tsp black pepper. Brush with 1 tablespoon neutral oil to create a thin coating—this helps batter adhesion.
Tempura Batter
Chill equipment and ingredients
Place a metal or glass bowl and the measuring cup of ice water in the refrigerator or freezer for 5–10 minutes before starting. Keep the ice water very cold; temperature difference helps create a light, crisp batter.
Make batter
In the chilled bowl, whisk 1 large egg briefly until combined. Add 1 cup ice water and stir once. Sift together 1 cup all-purpose flour, 1/4 cup rice flour (or cornstarch), and 1/4 tsp baking soda. Add the dry mix to the egg-water mixture in two additions, stirring very gently with chopsticks or a fork just until moistened—lumps are fine. Add 3 ice cubes to keep the batter cold. Do not overmix; small lumps and slight streaks of flour help produce a light tempura texture. If batter thickens, add a tablespoon of ice water to adjust to a slightly thin, coatable consistency.
Frying
Heat oil
Pour 4 cups neutral oil into a heavy-bottomed pot to a depth of about 2–3 inches. Heat to 350–360°F (175–182°C). If you don't have a thermometer, test by dropping a small bit of batter: it should sizzle and rise immediately without browning too quickly.
Fry fish
Working in small batches to avoid lowering the oil temperature, dust each seasoned fish piece lightly with a tablespoon of flour (this helps batter stick). Dip fish into the cold batter to coat completely, letting excess drip off. Carefully lower into hot oil using a slotted spoon or spider. Fry 2–3 minutes per batch, turning once, until batter is pale golden and crisp and fish registers 130–140°F (54–60°C) internal or flakes easily. Remove to a wire rack set over a baking sheet to drain. Keep finished pieces in a warm oven (200°F/95°C) while remaining batches cook; do not stack pieces.
Second fry (optional for extra crispness)
For an extra-crisp finish, increase oil temperature to 375°F (190°C). Return drained tempura to hot oil for 15–30 seconds until very light golden, then drain again on a rack.
Truffle Amazu (Truffle-scented Amazu Vinegar Sauce)
Make amazu
In a small saucepan, combine 1/2 cup rice vinegar, 2 tablespoons mirin, 1 tablespoon light soy sauce, 1 tablespoon sugar, 2 tablespoons water, and 2 tablespoons dashi stock. Warm gently over low heat, stirring until sugar dissolves—do not boil. Taste and adjust balance: amazu should be bright, slightly sweet, and savory.
Finish with truffle
Remove saucepan from heat and let cool for 2–3 minutes. Whisk in 1/2 teaspoon white truffle oil, 1 teaspoon fresh lemon juice, and 1/4 teaspoon salt. Taste and add a touch more truffle oil only if needed—truffle oil is potent. Keep warm or at room temperature; do not reheat the sauce once truffle oil is added, to preserve aroma.
Finishing and Garnish
Plate and garnish
Arrange tempura whitefish on a warmed plate or platter. Spoon a light pool of Truffle Amazu on the plate (or serve in a small dipping bowl alongside). Sprinkle 2 tablespoons thinly sliced scallions over the tempura and finish with 1/4 cup microgreens or a few shiso leaves if using. Lightly dust fried pieces with 1/4 teaspoon fine sea salt and serve with 2 lemon wedges.
Service notes
Serve immediately while tempura is hot and crisp. If making ahead, keep fried pieces in a single layer on a wire rack in a low oven and re-crisp with the optional second fry or a quick 2–3 minute blast in a 400°F (200°C) oven before serving.
