Prepare crab

If crab legs are frozen, thaw overnight in refrigerator. Rinse and pat dry. Using kitchen shears, split shells lengthwise where needed to expose meat for easier eating and sauce absorption.

Mince and zest

Finely mince shallot and garlic. Zest the lemon, then juice and set both aside. Chop parsley and measure other ingredients.

Cooking the Sauce and Crab

Sear aromatics

In a large heavy skillet over medium heat, add olive oil and 2 tablespoons butter. When butter foams, add minced shallot and sauté 2–3 minutes until softened and translucent. Add minced garlic and cook 30–45 seconds until fragrant, taking care not to brown.

Stir in crushed red pepper flakes and smoked paprika; cook 15–20 seconds to bloom the spices. Add tomato paste and cook 1 minute, stirring constantly, to deepen flavor and remove raw taste.

Pour in the white wine (or seafood stock) to deglaze the pan, scraping up any browned bits. Increase heat to medium-high and simmer 2–3 minutes until liquid reduces by about half.

Finish creamy sauce

Reduce heat to medium-low. Stir in remaining 2 tablespoons butter, then add heavy cream and creme fraiche. Whisk to combine and simmer gently 3–5 minutes until sauce thickens slightly. Stir in grated Parmesan, lemon zest, half of the lemon juice, salt and black pepper. Taste and adjust seasoning—add more lemon juice or salt as needed.

Add crab and meld flavors

Nestle the split snow crab legs into the sauce, spooning sauce over the exposed meat. Cover skillet and warm for 3–5 minutes (for pre-cooked crab) just until heated through and flavors meld. If using cold raw crab (rare), ensure it reaches safe temperature by steaming 6–8 minutes; note snow crab is typically sold pre-cooked.

Finish

Remove cover, squeeze remaining lemon juice over the crab, sprinkle chopped parsley, and spoon sauce over crab. If the sauce is too thin, simmer uncovered 1–2 minutes to reduce; if too thick, add 1–2 tablespoons water or stock.

Serving

Transfer crab and sauce to a warmed serving platter or serve directly from skillet. Offer crusty bread, toasted baguette slices, or cooked rice/pasta to sop up the creamy spicy sauce. Garnish with extra parsley and lemon wedges. Serve hot.
