Method
Cooking the Base
Prepare Quinoa
Rinse the quinoa under cold water to remove bitterness. In a medium saucepan, combine the rinsed quinoa and water. Bring to a boil over medium-high heat.
Simmer
Once boiling, reduce the heat to low, cover, and let it simmer for about 15 minutes, or until the water is absorbed and the quinoa is fluffy.
Fluff and Set Aside
Remove from heat and let it sit, covered, for 5 minutes. Then fluff with a fork and set aside.
Preparing the Protein
Prepare Chickpeas
Drain and rinse the canned chickpeas. In a skillet over medium heat, add olive oil and the chickpeas.
Season Chickpeas
Sprinkle paprika and salt over the chickpeas, stirring often for about 5-7 minutes until they are heated through and slightly crispy.
Chopping Vegetables
Chop Vegetables
While the quinoa and chickpeas are cooking, chop the cherry tomatoes, cucumber, bell pepper, and avocado into bite-sized pieces.
Making the Dressing
Mix Dressing
In a small bowl, combine tahini, lemon juice, and a splash of water to thin it out. Whisk until smooth. Adjust consistency with more water if needed.
Assembling the Bowl
Layer Ingredients
In a large bowl, start with a base of quinoa, then add the seasoned chickpeas, chopped vegetables, and top with fresh parsley and feta cheese.
