slice and toast bread
Preheat oven to 200°C / 400°F (or set broiler). Slice the loaf on the bias into 12 slices about 1–1.25 cm thick. Arrange slices on a baking sheet in a single layer. Brush both sides lightly with olive oil (about 2 tablespoons total). Toast in the oven 6–8 minutes, flipping once, until golden and crisp. If using broiler, watch closely and broil 1–2 minutes per side.

Reserve toasted bread on a platter for assembly. Keep oven on if you plan to warm assembled bruschetta briefly.
Gorgonzola cream

In a bowl, crumble the gorgonzola and add the softened cream cheese. Stir to combine, then add the heavy cream 1 tablespoon at a time until the mixture reaches a smooth, spreadable consistency (about 2–3 tablespoons total). Stir in lemon juice and 1 teaspoon freshly ground black pepper. Taste and adjust: add a pinch of salt only if needed (gorgonzola is salty). Transfer mixture to a piping bag or small bowl for easier spreading.

Core and thinly slice pears crosswise into 1–2 mm slices (or thin wedges) so they lay nicely on bread. To prevent browning if needed, toss briefly with a few drops of lemon juice.

toast pecans
In a small skillet over medium heat, melt 1 tablespoon butter. Add pecan halves and toast, stirring frequently, 3–4 minutes until fragrant and slightly darker. Remove from heat and transfer to a plate to stop cooking. Roughly chop half of the toasted pecans, leaving some halves whole for texture.

assemble bruschetta
Spread about 1 tablespoon of the gorgonzola cream evenly on each toasted bread slice. Top each with 2–3 thin pear slices (or a small fan), then place a piece of crispy capicola on top. Sprinkle with chopped toasted pecans and scatter a couple of pecan halves for crunch. Add a few leaves of microgreens or small arugula if using, and a light pinch of fresh thyme leaves.

Drizzle each bruschetta lightly with honey (about 1/4 teaspoon per slice; total about 2 tablespoons). Grind a little fresh black pepper over the top to taste (about 1 teaspoon across all). Arrange on a serving platter and serve immediately so bread stays crisp.
