Prepare the Filling

In a large skillet, heat sesame oil over medium heat. Add ground pork and cook until browned. Stir in carrots, cabbage, green onions, soy sauce, ginger, garlic, salt, and pepper. Cook for an additional 5-7 minutes until vegetables are tender. Remove from heat and let cool.

Assemble the Egg Rolls

Lay an egg roll wrapper on a clean surface, diamond side facing you. Place about 2 tablespoons of the cooled filling in the center. Fold the bottom corner over the filling, fold in the sides, and roll tightly to close. Repeat with remaining wrappers and filling.

Fry the Egg Rolls

In a deep pan or fryer, heat oil to 180°C (350°F). Fry the egg rolls in batches until golden brown and crispy, about 3-4 minutes per side. Drain on paper towels.

Serve hot with soy sauce or your favorite dipping sauce.
