Gather all the ingredients and preheat your oven to 350°F (175°C).
In a skillet over medium heat, cook the bacon, ham, or sausage until crispy and browned. Remove from the skillet and set aside.
In the same skillet, add butter and let it melt. Crack the eggs into a bowl, add salt and pepper, and whisk until combined. Pour the eggs into the skillet and scramble until fully cooked.
Slice the croissants in half and layer the cooked meat and scrambled eggs on the bottom half. If desired, sprinkle shredded cheese on top.
