Preparation of Leche de Tigre

1. Make Leche de Tigre

In a blender, combine lime juice, fish stock, garlic, ginger, cilantro, salt, and black pepper. Blend until smooth. Strain through a fine mesh sieve and set aside.

Cooking Tuna

2. Sear the Tuna

Heat a skillet over medium-high heat and add a little chili oil. Season the tuna fillets with salt and pepper. Sear the tuna for about 1-2 minutes on each side, until a crust forms but the inside remains rare. Remove from heat and let rest for a minute before slicing.

Assembly

3. Plate the Dish

Slice the cucumber into thin rounds. On a plate, arrange the cucumber slices, then add the sliced seared tuna on top. Drizzle with leche de tigre and finish with finger lime pearls and a drizzle of chili oil.
