Preparing the Chimichurri Sauce
Make the Chimichurri
In a bowl, combine the chopped parsley, oregano, garlic, red wine vinegar, olive oil, red pepper flakes, salt, and black pepper. Mix well and set aside to let the flavors meld.
Preparing the Branzino
Preheat the oven
Preheat your oven to 400°F (200°C).
Season the fish
Pat the branzino dry with paper towels. Rub the outside and inside of the fish with olive oil, salt, and black pepper.
Roast the fish
Place the branzino on a baking sheet lined with parchment paper. Roast in the preheated oven for about 25-30 minutes, or until the fish is cooked through and flakes easily with a fork.
Char the lemon
In the last 5 minutes of roasting, add the lemon wedges to the baking sheet to char them slightly.
Serving
Serve
Once the branzino is cooked, remove it from the oven and serve hot with the chimichurri sauce drizzled on top and charred lemon on the side.
