Washington Oyster with quail egg, ponzu, tobiko, and wakame (keep the nico’s shot glass for +$3)
Carefully shuck the fresh Washington oysters and place them in a shot glass.
Gently crack a quail egg into each shot glass over the oyster.
In a small bowl, combine the ponzu sauce, lemon juice, salt, and black pepper. Stir well.
Drizzle the ponzu mixture over the oyster and quail egg in the shot glass.
Top with a spoonful of tobiko and a pinch of reconstituted wakame.
Serve immediately and enjoy your oyster shooter!
