Pasta

Method

Preparation

  1. 1

    Make the Pasta

In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center and add the eggs and water. Mix until a dough forms, then knead on a floured surface for about 8-10 minutes until smooth.

  2. 2

    Roll and Cut the Pasta

Divide the dough into four pieces. Roll each piece out using a pasta machine or a rolling pin until thin. Cut into 1-inch wide strips to form rigatoni shapes or use a rigatoni cutter.

  3. 3

    Cook the Pasta

Bring a large pot of salted water to a boil. Add the rigatoni and cook for 8-10 minutes or until al dente. Drain and set aside.

  4. 4

    Prepare the Sauce

In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant. Stir in the crushed tomatoes, salt, and black pepper. Simmer for about 15 minutes, then add the fresh basil.

  5. 5

    Combine and Serve

Add the cooked rigatoni to the sauce and toss to combine. Serve hot, topped with grated Parmesan cheese.
