Cook the Pasta
In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

Make the Roux
In the same pot, melt the unsalted butter over medium heat. Once melted, add the all-purpose flour and whisk for about 1 minute until it’s lightly golden.

Add Milk
Gradually whisk in the whole milk, making sure there are no lumps. Continue to cook, stirring frequently, until the mixture thickens and bubbles gently, about 5-7 minutes.

Add Cheese
Reduce the heat to low and stir in the sharp cheddar cheese and Parmesan cheese until melted and smooth. Season with salt, black pepper, and paprika.

Combine Pasta and Sauce
Fold in the cooked macaroni into the cheese sauce until well combined. If the mixture seems too thick, add a splash more of milk to reach desired consistency.

Optional Topping
If using breadcrumbs, preheat the oven to 350°F (175°C). Transfer the mac and cheese into a greased baking dish, sprinkle breadcrumbs on top, and bake for 20-25 minutes until golden brown.
