Cook the Steak
Preheat your grill or skillet over medium-high heat. Season the ribeye steak with salt and pepper. Once hot, cook the steak for about 4-5 minutes on each side for medium-rare, or cook to your preferred doneness. Remove from heat and let rest for a few minutes before slicing thinly against the grain.

Assemble the Cheesesteak
Slice the sub rolls open lengthwise without cutting all the way through. Layer the sliced steak into each roll, followed by the sautéed vegetables. Finally, top with 2 slices of white American cheese for each sandwich.

Melt the Cheese
If desired, place the assembled sandwiches under a broiler for 1-2 minutes until the cheese is melted and bubbly, being careful not to burn the bread.
