    Cook the Steak

    Preheat your grill or skillet over medium-high heat. Season the ribeye steak with salt and pepper. Once hot, cook the steak for about 4-5 minutes on each side for medium-rare, or cook to your preferred doneness. Remove from heat and let rest for a few minutes before slicing thinly against the grain.

    Sauté the Vegetables

    In the same skillet or grill, add a little oil if needed and sauté the sliced onions and mushrooms over medium heat until they are soft and caramelized, about 5-7 minutes. Add the sliced bell peppers and cook for an additional 3-5 minutes until they are tender.

    Assemble the Cheesesteak

    Slice the sub rolls open lengthwise without cutting all the way through. Layer the sliced steak into each roll, followed by the sautéed vegetables. Finally, top with 2 slices of white American cheese for each sandwich.

    If desired, place the assembled sandwiches under a broiler for 1-2 minutes until the cheese is melted and bubbly, being careful not to burn the bread.
