Cook the Pasta

Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the rest.

Sauté the Mushrooms

In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Add sliced mushrooms and cook for about 5-7 minutes until browned. Stir in the peas and cook for an additional 2 minutes.

Prepare the Sauce

In a bowl, whisk together egg yolks, grated Parmesan cheese, and black pepper. Gradually add 1/2 cup of reserved pasta water to the egg mixture, whisking constantly to temper the eggs.

Combine Everything

Add the drained spaghetti to the skillet with mushrooms and peas. Remove from heat, then pour the egg and cheese mixture over the pasta, tossing quickly to combine. If the sauce is too thick, add more reserved pasta water until desired creaminess is reached.

Season and Serve

Taste and season with salt and additional black pepper as needed. Serve immediately, garnished with extra Parmesan cheese if desired.
