Red Wine Syrup

Make red wine syrup

Combine 1 cup dry red wine and 1/2 cup granulated sugar in a small saucepan over medium heat. Stir to dissolve the sugar, then bring to a gentle simmer. Reduce heat to low and simmer uncovered until the mixture is reduced by about half and has a syrupy consistency (about 15–20 minutes). Watch carefully to avoid burning; stir occasionally. If the syrup becomes too thick as it cools, add a teaspoon or two of water to reach desired pourable consistency. Let cool to room temperature. Transfer to a jar and refrigerate; will keep for up to 2 weeks.

Chill glass and prepare ice

If desired, chill an old fashioned or rocks glass briefly in the freezer or fill with ice water while you prepare ingredients. Prepare one king cube (large clear ice cube) and have it ready.

Combine cocktail ingredients

In a mixing glass or stirring vessel, add 2 oz Bardstown bourbon, 1/2 oz cooled red wine syrup, and 3 dashes black walnut bitters.

Stir

Add a few large ice cubes to the mixing glass and stir gently for 20–30 seconds (or until well chilled and slightly diluted). This chills and integrates the syrup and bitters with the bourbon without over-diluting.

Serve

Discard ice water from the chilled serving glass if used. Place the king cube in the glass, then strain the stirred cocktail over the king cube.

Garnish

Express the oils of an orange peel over the surface of the cocktail by holding the peel skin-side down above the drink and giving it a firm twist, then rub the peel around the glass rim and drop it into the drink as garnish.

Optional: For a smoky aroma, briefly torch the orange peel oils before expressing them over the cocktail, or rinse the glass with a few drops of red wine syrup for added aroma.
