Asparagus fries
Prepare asparagus
Wash asparagus and trim woody ends (bend each spear until it snaps or trim about 1–1.5 inches from the bottom). Pat dry thoroughly with paper towels — dry spears help coatings adhere and prevent excess oil splatter.
Set up dredging stations
In a shallow bowl or plate combine the all-purpose flour and 1/4 teaspoon of the kosher salt. In a second bowl whisk together the eggs and 1/2 cup buttermilk until smooth. In a third wide bowl combine panko breadcrumbs, grated Parmesan, cornmeal, garlic powder, onion powder, smoked paprika, remaining 3/4 teaspoon kosher salt, and 1/2 teaspoon black pepper; mix thoroughly and break up any clumps.
Coat asparagus
Working in batches, dredge each asparagus spear first in the flour (shake off excess), then dip into the egg-buttermilk mixture allowing excess to drip back into the bowl, and finally press into the Parmesan-panko mixture until well coated. Place coated spears on a wire rack set over a sheet tray. For an extra-crispy double coat, optionally repeat the egg and panko step once more.
Heat oil
Pour about 1"–1.5" of vegetable oil into a heavy skillet or Dutch oven (about 1 cup for a medium skillet). Heat over medium-high until the oil reaches 350°F (175°C) — if you don’t have a thermometer, test with a small breadcrumb: it should sizzle and turn golden within 20–30 seconds.
Fry asparagus
Carefully add coated asparagus in a single layer (do not overcrowd the pan). Fry for 2–3 minutes, turning once, until golden brown and crispy. Use a slotted spoon or tongs to transfer fries to a paper towel–lined tray to drain. Keep warm in a 200°F (95°C) oven while you fry remaining batches. Total frying time per batch depends on spear thickness; thin spears may take 1.5–2 minutes, thick spears 3–4 minutes.
Finish
Season the hot fries immediately with a light sprinkle of kosher salt and a little extra grated Parmesan if desired. Let rest 1–2 minutes to set the crust before serving.
Buttermilk ranch
Make the ranch: In a small bowl whisk together mayonnaise, sour cream, 1/4 cup buttermilk, minced garlic, lemon juice, Worcestershire sauce, chopped chives, parsley, dill, 1/2 teaspoon kosher salt, and 1/4 teaspoon black pepper until smooth. Taste and add additional buttermilk a tablespoon at a time to reach desired dipping consistency or adjust salt and lemon to taste. Chill at least 15 minutes so flavors meld (can be made up to 24 hours ahead).
Serve: Transfer buttermilk ranch to a small serving bowl alongside the hot asparagus fries for dipping.
