Method
Steak
Bring steaks to room temperature
Remove steaks from the refrigerator 30–45 minutes before cooking. Pat them dry very well with paper towels—moisture prevents good browning.
Season
Generously season both sides of the steaks with kosher salt and lightly press 1–2 tsp of freshly ground black pepper onto each side so the pepper adheres.
Preheat pan
Heat a heavy skillet (cast iron preferred) over medium-high heat until very hot, about 4–6 minutes. Add the vegetable oil and heat until shimmering but not smoking.
Rest steaks
Transfer steaks to a cutting board or warm plate and loosely tent with foil. Rest 5–8 minutes while you make the sauce so juices redistribute.
Black Pepper Sauce
Add crushed pepper
Stir in the coarsely crushed black pepper and cook for 15–30 seconds to bloom the pepper’s oils and flavor the fat.
Deglaze
If using brandy/cognac: carefully add it to the hot pan and, if comfortable, ignite with a long match or turn up the heat briefly to burn off the alcohol (flambé) — tilt the pan away from you and keep a lid nearby for safety. If not using alcohol, add the beef stock instead. Scrape up browned bits from the pan with a wooden spoon; these bits add deep flavor.
Reduce
Let the liquid simmer and reduce by about half, about 1–2 minutes.
Finish sauce
Lower heat to medium-low. Stir in the heavy cream, Dijon mustard and Worcestershire sauce. Simmer gently until the sauce thickens slightly to coat the back of a spoon, about 1–2 minutes. Taste and season with salt and up to 1 tsp freshly ground black pepper if you want more heat. Do not overboil; the sauce should be silky.
Finish & Serve
