    Marinate pork

    Place the pork strips in a medium bowl. Add 2 tbs soy sauce, 1 tbs rice wine (or dry sherry), 1 tsp cornstarch and 1 tbs vegetable oil. Mix thoroughly to coat each piece. Let marinate at room temperature for 15–20 minutes (or refrigerate up to 1 hour).

    Pre-cook pork

    Heat a large skillet or wok over high heat until very hot. Add 1 tbs vegetable oil and swirl to coat. Add pork in a single layer (work in batches if needed) and stir-fry for 3–4 minutes, until edges are browned and pork is mostly cooked but still slightly tender. Remove pork to a plate and tent loosely with foil.

Sweet & Sour Cabbage

    Prepare vegetables

    While pork marinates, core and thinly slice the cabbage, thinly slice the red bell pepper, julienne the carrot, mince garlic and ginger, and separate white and green parts of the scallions.

    Sauté aromatics

    In the same skillet or wok used for pork, reduce heat to medium-high and add 1 tbs vegetable oil. Add the white parts of the scallions, minced ginger and garlic; stir for 30–45 seconds until fragrant but not browned.

    Cook vegetables

    Add the sliced cabbage, red bell pepper and carrot to the skillet. Stir-fry for 4–6 minutes, tossing frequently, until cabbage is wilted but still has a little bite and vegetables are tender-crisp. Season lightly with 1/2 tsp salt and 1/4 tsp black pepper during cooking.

Sweet & Sour Sauce

    Make sauce

    In a small bowl combine 1 tbs rice vinegar, 2 tbs granulated sugar, 2 tbs ketchup, 1 tsp soy sauce and 1 tbs chicken or vegetable broth. Taste and adjust balance—add a little more vinegar for tang, sugar for sweetness, or soy for saltiness.

    Make slurry

    In a separate small cup whisk together 1 tsp cornstarch and 1 tbs water until smooth.

    Finish sauce with slurry

    Pour the sauce mixture into the skillet with the cooked vegetables and bring to a gentle simmer. Stir the cornstarch slurry again and slowly add it to the simmering sauce while stirring. Simmer for 1–2 minutes until the sauce thickens and becomes glossy.

Combine & Finish

    Return pork to skillet

    Add the cooked pork (and any accumulated juices) back to the skillet with the sauced vegetables. Toss to combine and coat the pork evenly with the sweet & sour sauce. Cook together for 1–2 minutes to ensure pork is heated through and flavors meld.

    Adjust seasoning & serve

    Stir in 1 tsp sesame oil (optional) and the green parts of the scallions. Taste and adjust salt and pepper as needed (up to 1/2 tsp additional salt or pepper). Sprinkle toasted sesame seeds and chopped cilantro or parsley if using. Serve hot over steamed rice or noodles.
